Country Captain Scallops

Ingredients

  • 1 Tbs. curry powder
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1 lb. bay scallops
  • 1 1/2 Tbs. olive oil
  • 2 1/2 C vertically sliced onion (about 2 medium)
  • 3/4 C thinly sliced green bell pepper (1 medium)
  • 2 garlic cloves minced
  • 2/3 C vegetable broth
  • 1/4 C dried currants
  • 2 Tbs. chopped fresh thyme (divided)
  • 1 (14 1/2 oz.) can diced tomatoes with jalapeño (drained)
  • 1/2 C sliced almonds (toasted)

Preparation

Step 1

Combine curry powder, salt and black pepper.
Sprinkle scallops with curry mixture.
Heat oil in a large non-stick skilled over medium-high heat.
Add scallop mixture to pan, saute 5 mins.
Add onion, bell pepper and garlic, saute 3 mins.
Add broth, currants, 1 Tbs. of thyme and tomatoes, bring to a boil
Reduce heat and simmer 5 min.
Stir in remaining 1 Tbs. thyme and cook 1 min.
Sprinkle with almonds.

Serve over rice
