Ingredients
- 1 lb medium golden beets, rinsed & trimmed
- Salt
- 1/2 lb snow peas, trimmed
- 3 c fresh corn kernels
- 1 English cucumber, cut into cubes
- 1/3 c safflower oil
- 2 T champagne vinegar
- 1 t seasoned salt
Preparation
Step 1
1. Preheat oven to 400F.
2. Wrap beets in foil & roast until tender, ~ 45 minutes.
3. Cool, then peel & cut into quarters.
4. Meanwhile, fill 6qt saucepan w/salted H2O.
5. Add snow peas & boil 4 minutes, adding corn kernels during last 2 minutes.
6. Rinse under cold running water. Drain well.
7. In bowl, combine beets, snow peas, corn, & cucumber.
8. Drizzle w/oil & vinegar. Add seasoned salt.
