Nutty Basmati Rice with Almonds

Ingredients

  • 1/2 c slivered almonds
  • 2 c reduced-sodium [vegetable broth]
  • 1 c basmati rice
  • 1/4 t salt
  • 1/4 t ground black pepper

Preparation

Step 1

1. Place almonds in a medium saucepan & set pan over medium heat.
2. Cook 2-3 minutes, until lightly golden brown, shaking the pan frequently to prevent burning.
3. Add broth, rice, salt & pepper.
4. Bring to a boil.
5. Reduce heat to low, cover & simmer until liquid is absorbed, ~ 20 min.
6. Fluff w/a fork before serving.
