Ingredients

  • 2 C Flour
  • 2 t baking soda
  • 1/2 t salt
  • 2 t cinnamon
  • 3 eggs, well beaten
  • 3/4 C vegetable oil
  • 3/4 C buttermilk
  • 2 C sugar
  • 2 t vanilla extract
  • 1 8 oz. can crushed pineapple, drained
  • 2 C grated carrots
  • 1 (31/2 oz.) can flaked coconut
  • 1 C walnuts, chopped
  • Buttermilk Glaze
  • Orange-Cream Cheese Frosting

Preparation

Step 1

Preheat oven to 350 deg. Grease and flour two cake pans.

1. Combine flour, soda, salt and cinnamon, set aside.

2. Beat eggs and sugar til smooth. Combine egg mixture with oil, buttermilk, and vanilla, beat to blend. Beat in reserved flour mixture. Add pineapple, carrots, and nuts, beat until smooth, about 5 mins.

3. Pour batter into 2 greased and floured cake pans, bake at 350 deg. for 35-45 mins. Check with toothpick in center for doneness.

4. Poke cakes with a fork a few times. Pour Buttermilk Glaze evenly over layers. Cool in pans 15 minutes, remove and let cool completely.

5. Spread Orange-Cream Cheese Frosting between layers and on top and sides of cake.
