Grilled Peppers stuffed with Goat Cheese 0 Picture

Ingredients

  • 1 oz soft goat cheese
  • 1/4 cup shredded Monterey Jack Cheese
  • 1 T snipped fresh chives
  • 1 T snipped fresh basil
  • 2 medium red, yellow and/or red peppers, quartered
  • lengthwise or small peppers halfed

Preparation

Step 1

Mix all ingredients except peppers.
Heat grill to medium-high. grill peppers on rack over heat for about 8 minutes until peppers are crisp tender. Remove peppers from grill.
Spoon cheese mixture into pepper pieces and return to grill. Grill for for 2-3 minutes until cheese is melted.
Serve immediately.
