Ingredients
- 2 tsp olive oil
- 1/2 # turkey Italian turkey sausage, cut into 1/4 " rounds
- 1/2 cup red pepper, chopped
- 1 4oz can mushrooms, drained
- 2 Tbs pine nuts
- 1 garlic clove, minced
- 1/4 tsp crushed red pepper
- 1 (9oz) package fresh fettuccine
- 1 (9oz) bag baby spinach
Preparation
Step 1
Bring 3 quarts of water to a boil in a large saucepan, over high heat.
Meanwhile heat the oil in a large nonstick skillet over medium-high heat. Add the sausage and cook until lightly browned, about 4 minutes. Add the red pepper and mushrooms and saute about 3 minutes. Add the pine nuts, garlic, and crushed red pepper; cook, stirring frequently until the nuts are lightly browned and the sausage is dark brown, about 2 minutes.
Add the pasta to the boiling water and cook until al dente, about 2 minutes. Drain, reserving 1/2 cup of the pasta cooking water. Return the pasta to the saucepan; add the sausge mixture, spinach, and the reserved water; toss to coat.
