Ingredients
- 8 ozs cream cheese, softemed
- 1 cup mayo
- 2 tsps curry powder
- 1 tsp salt
- 6 cups chopped, cooked chicken
- 1 (8 oz) can crushed pineapple, drained
- 1 cup dried cranberries
- 1/2 cup chopped green onions
- 1 (2 oz) pkg slivered almonds, toasted
- sliced almonds

Preparation
Step 1
1. Whisk together the cream cheese, mayo, curry powder, & salt in a large bowl.
2. Stir in the chicken, drained pineapple, dried cranberries, green onions, & toasted almonds. Refrigerate until ready to serve.
3. If desired, spoon mixture into a 8" round cake pan that has been lined with plastic wrap. Cover & chill 8 - 24 hours.
4. To serve, invert chicken salad onto a cake stand and remove plastic. Gently press sliced almonds into sides and top of salad & garnish with fresh herbs, berries, or peach slices, as desired.
