No Bundt Rum (Pie)

I din't have a bundt pan to make Rum Cake.... So, I came up with something different.... A Rum Pie!

Ingredients

  • 1 pie crust (refrigerated or homemade)
  • 1/2 cup (1 stick) butter or margarine softened
  • 2 eggs, beatened
  • 2 shots of Rum
  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 1 cup chopped walnuts
  • 3/4 cup Hershey's Butterscotch Chips
  • Vanilla Ice Cream (optional)

Step 1

1) Heat oven to 350. Place pie crust into a 9-inch pie pan.
2) Beat butter in a medium bowl; add eggs and Rum, blending well. Stir together sugar and flour; beat into butter mixture. Stir in walnuts and butterscotch chips; spread in bottom of crust.
3) Bake 45-50 minutes or until golden brown. Cool on wire rack. Best served slightly warm.
