Ingredients
- 4 Boneless Chicken Breast
- 1 T Butter per breast, frozen
- 1 Garlic clover per breast
- 1-2 C Dry bread crumbs
- 2 Eggs, beaten
- 1 Small bunch parsley, finely chopped
- Salt and pepper to taste
Preparation
Step 1
1. Salt and pepper both sides of meat.
2. Place skin side down, top with pat of butter, ½ t parsley and 1 crushed clove of garlic. Fold chicken, short ends first, and make as tight a package as possible. Skewer shut.
3. Roll each breast in crumbs, then egg, then crumbs again.
4. Roast at 325 degrees 1 ¼ hour. Baste with butter near the end of baking time.
