STUFFED ZUCCHINI BOATS

  • 3 large zucchini (not too large)
  • 1 lb ground beef
  • 1 28 oz can chopped tomatoes
  • 2 C cooked rice
  • 1 t garlic powder
  • 1/2 t basil
  • 1/2 t oregano
  • 1/2 C mozzarella cheese
  • 1/4 C parmesan cheese
  • salt, pepper

Preparation

Step 1

Saute ground beef until brown. Drain and cool. Place in a mixing bowl, add cooked rice, garlic, basil, oregano, salt and pepper. Cut zucchini in half lengthwise, remove seed area. Fill cavity with meat mixture, sprinkle with parmesan cheese and place in baking dish. Pour tomatoes over stuffed zucchini. Sprinkle with mozzarella cheese. Cover the aluminum foil. Bake at 350 degrees until zucchini is tender (approx. 45 minutes).
