Sweet Potato NO skins

Ingredients
- peel the potatoes and cut off ends
- 16 oz 1/2 inch thick rounds - light skinned sweet potatoes - 1 1/2 pds
- 1 tsp olive oil
- 1/8 tsp sea salt
- 1/8 tsp garlic powder
- 2 oz finely shredded cheddar cheese
- 4 tsp bacon bits
- 4 tsp chopped scallions
- t tbsp fat free greek yogurt - optional
Details
Preparation
Step 1
preheat over to 450
line baking sheet with nonstick foil
mix potatoes & oil
place rounds in a single layer - not touching
sprinkle salt, garlic pd,
bake 10 min
flip - bake 7 - 9 minutes
push rounds together
add cheddar, bacon scallions
bake 2 - 3 minuted - until cheese is melted
serve immediately
