Salmon with Cucumber Cream

Ingredients

  • Sauce:
  • 4-6 4 oz. salmon steaks
  • 1 lemon
  • 1/4 C fat-free sour cream
  • 1/4 C low fat yogurt
  • 2 T low fat mayo
  • 1/2 cucumber, peeled and seeded
  • 1 T white onion, chopped
  • 1 T fresh dill, chopped
  • 3 T parsley, chopped
  • 1/4 t salt

Preparation

Step 1

Cut lemon in half. Squeeze juice from one half over salmon steaks. Sprinkle with salt and pepper. Grill or broil over medium high heat without turning 6-8 minutes. Combine sauce ingredients in food processor until smooth. Serve over salmon.
