Apple Nut Bread

Ingredients

  • 1/2 cup butter, softened
  • 1 cup plus 2 Tbsp sugar, divided
  • 2 eggs
  • 1 cup apple, peeled and grated
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 Tbsp buttermilk
  • 1/2 tsp vanilla extract
  • 1 cup nuts, chopped
  • 3/4 tsp cinnamon

Preparation

Step 1

Cream the butter and 1 cup sugar in a large mixing bowl. Add the eggs, one at a time, beating well after each addition; Stir in the apple. Combine the flour, baking soda and salt in a medium mixing bowl; Add to creamed mixture alternately with the buttermilk. Stir in vanilla and nuts. Spray a 9” x 5” x 3” loaf pan with nonstick cooking spray and pour the batter into the pan. In a small bowl, combine the cinnamon and remaining sugar; Sprinkle over the batter. Bake the bread at 350 degrees Fahrenheit for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool the bread for 10 minutes and remove the bread from the pan to a wire rack to cool. **Carefully run a knife around the edges of the loaf and then gently shake or bump the pan to ensure that the loaf doesn’t stick to the pan.
