Southwest Bake

Ingredients

  • 1 cup hot salsa
  • 1 cup frozen corn
  • 1 cup fat free sour cream
  • 15 oz black beans, drained and rinsed
  • 14 oz can diced tomatoes, drained of most liquid
  • 2 1/4 oz can of sliced black olives
  • 2 cups shredded light cheddar
  • 1 cup cooked brown rice

Preparation

Step 1

Cook rice:
1 cup rice
2 cups water
Microwave 25 minutes

Mix all ingredients except 1/2 cup cheese.
Spray 9 x 13 pan with Pam
Pour mixture into pan. Sprinkle remaining cheese on top.
Bake at 350 degree oven for 30 minutes
Let rest 10 minutes.
