Ingredients
- 2 cans black-eyed peas
- 1 can shoe peg corn
- 1 -jar pimientos
- Jalapeno, quantity to taste
- 1 red onion, chopped
- 1-cup celery, chopped
- 1-cup olive oil
- 1/2 ½ cup vinegar (red wine or balsamic)
- 1-cup sugar
- 2 tomatoes, seeded and diced
- 2 dashes Tabasco
- Minced garlic
Preparation
Step 1
Drain and rinse all canned and jarred ingredients. Place oil, vinegar and sugar in a pan until sugar dissolves. Mix everything in a bowl. Marinate for 24 hours. Great served on baked Frito-lay Tostitos scoops.
