Ingredients

  • 2 cans black-eyed peas
  • 1 can shoe peg corn
  • 1 -jar pimientos
  • Jalapeno, quantity to taste
  • 1 red onion, chopped
  • 1-cup celery, chopped
  • 1-cup olive oil
  • 1/2 ½ cup vinegar (red wine or balsamic)
  • 1-cup sugar
  • 2 tomatoes, seeded and diced
  • 2 dashes Tabasco
  • Minced garlic

Preparation

Step 1

Drain and rinse all canned and jarred ingredients. Place oil, vinegar and sugar in a pan until sugar dissolves. Mix everything in a bowl. Marinate for 24 hours. Great served on baked Frito-lay Tostitos scoops.
