Ingredients

  • 4 boneless skinless chicken breasts, pounded to 1/4 inche thickness
  • 1/4 pound sliced deli ham
  • 1/4 pound sliced deli swiss cheese
  • 4 slices sharp cheddar cheese
  • 2 tablespoon's mayonnaise mixed with 1 teaspoon Dijon mustard, 1/4 teaspoon black pepper, 1 tablespoon romano cheese and 1 teaspoon hot sauce
  • 1/2 cup dry white wine
  • 1 cup chicken stock
  • 1/2 cup heavy cream
  • 1 tomato chopped
  • 3 cloves garlic, minced
  • 1 shallot, minced
  • 2 green onions, chopped
  • juice of 1/2 lemon
  • 1/2 tablespoons mixed fresh herbs such as thyme, basil, parsley and rosemary
  • 1 cup flour mixed with 1 teaspoon salt and pepper

Step 1

Lay each breast on work surface, brush each breast lightly with mayonnaise mixture, starting with slices of swiss cheese place on each breast then ham, fold over and secure with toothpicks.
Brush again the breasts with mayonnaise mixture , dredge in seasoned flour.
In a large skillet heat olive oil and sear breasts on all sides, remove to a plate. Add shallot and garlic and soften, add wine to deglaze pan and reduce until almost gone, add broth, tomato, cream and green onions and herbs bring to a boil cook 5 minutes, return chicken to skillet baste with sauce cover turn to low and poach 15 minutes, top each cordon blue with the cheddar cheese slice cover again and cook 5 more minutes until chicken is done, good with rice or pasta or bread for the sauce
