Potato and Leek Soup

Ingredients

  • 3 3 3 bacon slices
  • 3 3 3 cups chopped or sliced leek
  • 4-1/2 4-1/2 4-1/2 cups rich turkey stock
  • 4 4 4 cups cubed peeled Yukon gold potato
  • 1/2 1/2 1/2 tsp salt
  • 1/2 1/2 1/4 tsp chopped fresh or 1/4 tsp dried thyme
  • 2 2 2 Tbsp chopped fresh parsley for garnish

Preparation

Step 1

Cook bacon to crisp.  Set aside for garnish
Add leek to pot, cover and reduce heat to med-low and cook 3 min
Add stock, potato, salt, tyme.  Bring to boil, lower heat, simmer 15 min until potato tender
Remove 1 cup solids and blend in blender.  Return to pan.  Leave rest of soup chunky or puree the whole thing.
Garnish with parsley and bacon if desired
