Honey-Dijon Chicken ( Whitney Downer)

  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon extra-virgin olive oil, plus more for grill
  • 1/4 teaspoon salt
  • Freshly ground black pepper
  • 4 boneless skinless chicken breasts, butterflied
  • 2 Tablespoons flour

Preparation

Step 1

On a piece of waxed paper, combine flour, salt and pepper; coat chicken with mixture. In a small dish, combine honey and mustard; set aside.
In a skillet, heat oil over medium-high heat; quickly brown chicken on both sides. Place on greased baking sheet; spread with honey mixture. Bake in preheated oven for 10-15 minutes or until chicken is no longer pink inside.
