Ingredients
- 7 large onions, ground (4 cups)
- 1 medium cabbage, " , (4 cups)
- 10 green tomatoes, " , (4 cups)
- 12 green peppers, " , (5 cups)
- 6 sweet red peppers " , (1 1/2 ")
- 1/2 cup granulated pickling salt
- 6 cups sugar
- 1 tbsp. celery seed
- 1 1/2 tsp. turmeric
- 2 tbsp, mustard seed
- 2 cups water
- 4 cups cider vinegar
Preparation
Step 1
Wash vegetables to be used. Grind and measure first five ingredients. Use a coarse blade for grinding. Mix ground vegetables. Sprinkle with 1/2 cups salt and stir. Let stand overnight in a cool place. Rinse and drain. Add all additional ingredients. Stir. Bring to a boil. Boil gently for 5-minutes. Fill hot jars to 1/2 inch of top. Adjust lids. Process in boiling water bath 5-minutes. Start timing when water returns to a boil. Makes 9 pints.
