Fried Rice

Ingredients

  • 1 T vegetable oil
  • 2 C white rice, uncooked
  • 2 eggs, lightly beaten
  • 1 C chicken broth
  • 1 C frozen stir fry vegetables, thawed
  • 3 T soy sauce

Preparation

Step 1

Heat oil in large skillet over medium heat. Add rice, brown slightly. Add eggs, scramble until cooked thoroughly. Add broth, vegetables, and soy sauce to skillet. Bring to boil. Remove from heat. Let stand 5 minutes.
