Ground Beef Cabbage Casserole

Ingredients

  • 1 Med. onion, cho9pped
  • 6 TBS butter divided
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 small cabbage
  • 2 TBS flour
  • 2 Cloves garlic, minced
  • 2 TBS catchup
  • 1- 15oz. can diced tomatoes
  • 1 sm. can tomato sauce
  • 1 cup water
  • 2 TBS chopped parsley
  • 1 tsp salt.
  • 1/4 tsp pepper

Preparation

Step 1

Saute onion in 2 TBS butter until soft. Add the beef cook just until beef is cooked through. Drain fat. Mix in rice.
Turn into 2 1/2 qt. casserole dish. Shred cabbage fine and arrange over meat mixture. Melt remaining 4 TBS butter and blend in the flour. Cook until bubbly, then remove from heat and stir in garlic catchup, tomatoes, water, parsley, salt and pepper. Simmer, stirring about 5 minutes. Pour over cabbage. Cover and bake 350 for 30 min.
