Ingredients
- 10 eggs
- 1/2 cup flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1/4 cup butter, melted
- 8 oz. green chilies
- 1 lb. Monterey Jack, grated
- 2 cups low fat cottage cheese
Preparation
Step 1
Butter a 9 x 13 x 2 pan. In a large bowl, beat eggs until frothy. Add flour, baking powder, and salt. Blend well. Mix in melted butter, chilies and cheeses. Pour into buttered pan.
Bake at 400 for 15 minutes, lower to 325 and bake for 20 - 30 minutes.
Cut into servings. Serve with sour cream and salsa.
