Fruit Cocktail Cake

Ingredients

  • TOPPING:
  • 1 1/2 cups sugar
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 can (16 oz) fruit cocktail
  • 2 beaten eggs
  • 1/2 cup brown sugar
  • 1 cup chopped nuts
  • 1 stick butter
  • 3/4 cup white sugar
  • small can evaporated milk
  • 1 cup coconut

Preparation

Step 1

In large bowl place 1 1/2 cups sugar, 2 cups flour, 1 tsp soda and 1 tsp salt. Add Entire can of fruit cocktail and 2 beaten eggs. Mix well. Pour into ungreased 9 x 12 pan. On top of this sprinkle the 1/2 cup brown sugar and the chopped pecans. Bake at 350 for 40 min. While cake is baking, melt the stick of butter and add the 3/4 cup of white sugar and the small can of evaporated milk. Stir in coconut. When the cake comes out of the oven and is still hot, pour this mixture over it. Do not try to remove cake to platter but serve directly from pan.
