Roasted Cauliflower with Dates and Pine Nuts

Ingredients

  • 1 lg head of cauliflower cut into florets
  • Olive oil
  • Kosher salt and cracked pepper to taste
  • 4 Tbsp unsalted butter
  • 1/3 cup pine nuts
  • 2 cloves garlic minced
  • 1/2 cup pitted medjool dates coursely chopped

Preparation

Step 1

Preheat oven to 425*. Evenly spread the cauliflower on baking sheet. Drizzle with a little olive oil and season with salt & pepper. Bake in oven (tossing once) until golden brown on the egdes (about 20 min). Melt butter in small skillet on med-low heat. Add pine nuts and cook until they are golden brown. Add the garlic and dates and continue cooking until they are soft, 2-3 min. Season with salt. Transfer the hot cauliflower to a serving bowl and drizzle the pine nut mxture over the top and toss to combine. Serve warm.
