Ingredients
- 1/4 cup fresh lemon juice
- 1/4 cup light mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 anchovy fillets, roughly chopped
- 1 small garlic cloves
Preparation
Step 1
1. In a blender, combine lemon juice, mayonnaise, Parmesan, anchovy filets (if using), and garlic; blend until very smooth (the dressing will be thick).
2. Use on chopped romaine lettuce or other crisp and crunchy greens or drizzled over grilled chicken or shrimp.
