Cheesy Stuffing Cups

Ingredients

  • 1/4 cup butter
  • 3/4 cup chopped celery
  • 1/4 cup chopped mushrooms
  • 1 small onion diced
  • 1-1/2 cups chicken broth
  • 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
  • 1/3 cup dried cranberries
  • 1/4 cup coarsely chopped Walnuts
  • 1-1/2 cups Shredded Cheddar Cheese, divided
  • 1 egg, beaten

Preparation

Step 1

HEAT oven to 350ºF.

MELT butter in large skillet on medium heat. Add celery;onion,mushrooms cook and stir 5 min. or until crisp-tender. Stir in broth. Bring to boil. Remove from heat. Stir in stuffing mix, berries and nuts. Add 1 cup cheese and egg; mix lightly.

SPOON into 8 greased muffin cups, mounding mixture as necessary to use all the stuffing mixture. Sprinkle with remaining cheese.

BAKE 10 min. or until stuffing cups are heated through and cheese is melted.
