Ingredients
- 1 T EVOO
- 3 celery stalks, diced
- 2 carrots, diced
- 1 small red onion, diced
- 2 garlic cloves, minced
- 1 sprig oregano
- 1 28 oz. can diced tomatoes
- 2 1/2 c vegetable broth
- 1/4 c shaved Parmesan
- 1 cup small pasta, such as ditalini
- 1 can cannellini beans, rinsed and drained
Preparation
Step 1
In a medium heavy pot, heat oil over medium. Add celery, carrots, onion and garlic; season with salt and pepper. Cook until vegetables are soft. Add oregano, tomatoes and broth. Increase heat to high and simmer rapidly until liquid thickens slightly, about 5 minutes. Add pasta and cook, partially covered until tender (10-15 minutes). Add beans and cook until warmed through. Serve with shaved Parmesan.
