Polenta Terrine with Italian Sausage, Roasted Peppers & Kale

Ingredients

  • Polenta:
  • 1 1/2 •1 1/2 cups chicken stock
  • 1/2 •1/2 cup milk
  • 2 •2 tablespoons salt
  • Sausage:
  • 2 •2 roasted yellow peppers, julienne
  • 2 •2 cup kale, braised
  • 1/2 •1/2 cup parmesan, grated
  • Salad:
  • 1 •1 pint heirloom tomatoes
  • 1/2 •1/2 cup red wine vinaigrette
  • 6 •6 basil leaves, halved
  • •Salt and pepper
  • Polenta:
  • 1 •1 cup polenta
  • Sausage:
  • 2 •2 roasted red peppers, julienee
  • Sausage:
  • 1 •1 cup Italian sausage, cooked and crumbled
  • Salad:
  • 1 •1 tub buffalo mozzarella

Preparation

Step 1

1. Combine stock, milk and salt. Bring to a boil.

2. Stir in polenta and cook until not got grainy

Sausage:

1. Pour a layer of polenta in terrine

2. Crumble Italian sausage over polenta

3. Pour polenta over sausage

4. Sprinkle cheese and peppers

5. Pour polenta over. Sprinkle kale over.

Salad:

1. Toss all ingredients together

Assembly:

1. Slice sausage polenta terrine and sprinkle with parmesan. Place in salamander and slightly brown. On a plate, place salad and top with terrine.
