Ingredients
- 2 pounds pinto beans
- 3/4 pound bacon -- diced
- 1 can tomatoes -- (16 oz.)
- 2 large onions -- chopped
- 4 cloves garlic -- diced
- 3 jalapeno peppers -- diced
- 1 carrot -- diced
- 4 Tablespoons chili powder
- 1 Tablespoon cumin
- 2 Tablespoons salt
- 2 Tablespoons black pepper
- 1 dash tabasco
Preparation
Step 1
Wash beans and cover liberally with cold water. Bring to a rolling
boil and cook over high heat for 1 hour. Brown bacon in skillet and
add bacon and drippings to beans. Add remaining ingredients and reduce
heat to low. Cover pot and cook until beans are tender, 2-3 hours.
