Cheddar Cauliflower Soup (Sheila Tite Laster)

Ingredients

  • 1 head cauliflower, finely chopped
  • 1 med. onion, finely chopped
  • 2 stalks celery, finely chopped
  • 1 C. flour
  • 1 C. butter
  • 8 C. chicken broth
  • 1 pt. cream
  • 1 1/2 C. sharp cheddar cheese, finely shredded
  • salt and pepper, to taste

Directions

Melt butter and add celery and onions. Saute until slightly tender. Add flour and stir. Cook 5 minutes. Add chicken broth and cauliflower and simmer for 30 minutes. Add cream, cheese, salt, and pepper. Reduce heat to simmer and cook 10 minutes more, stirring often.
