Ingredients
- 1/2 cup (125 mL) fresh bread whole wheat crumbs

- 1/2 cup shredded cheddar cheese
- 1/2 cup black bean, rinsed and drained
- 1 cup mango, diced
- 1 tomato, seeded and diced
- 1/2 cup red bell pepper, diced
- 1 teaspoon cumin
- 1 green onion, chopped
- 1 Tablespoon fresh chopped jalapeno

- 2 tablespoons chopped fresh cilantro

In a large bowl, combine bread crumbs, green onion, garlic, black beans, chili powder, cumin pepper, salt, egg and beef or turkey. Shape mixture into eight balls and spread in lightly oiled muffin cups.
Using a spoon, make a small indentation in center of dumplings, filled with salsa and sprinkle with cheddar.
