Sweet Onion & Corn Pudding

Ingredients

  • 1 T unsalted butter +more for baking dish
  • 1/2 med sweet onion, diced
  • Salt
  • 2 3/4 c fresh or frozen corn kernels, thawed if frozen
  • 2 eggs
  • 3 T cornstarch
  • 3/4 c part skim ricotta cheese
  • 3/4 c 2% milk
  • 1/3 c sugar
  • 2 T finely choppepd chives

Preparation

Step 1

Preheat oven 350˚
Use a little butter to grease a 1 1/2 - 2 qt shallow baking dish
Melt 1 T butter in medium sauté pan or skilllet over med-high heat.
Add onion & stir to coat.
Season with salt to taste, then reduce heat to med & cook about 8 min, sitrring occasionally & adjusting heat so onion softens but does not brown.
Transfer to large bowl.
Combine corn, eggs, cornstarch, ricotta, milk & sugar in blender or processor.
Season with salt to taste.
Puree until almost smooth. (Mix will have some texture from corn.)
Add corn mix & chives to onion in bowl; stir to combine well.
Pour mix into the baking dish.
Bake 50-60 min, until firm & lightly browned around the edges.
Let rest for 10 min.
