Twice Baked Potato Casserole

Ingredients

  • 6 large baking potatoes
  • 4 T. butter
  • 1 C. cheddar cheese
  • green onion
  • 4 strips bacon, cooked and crumbled
  • 1/2 ½ C. sour cream, maybe more
  • 1/4 ¼ C. milk, maybe more

Preparation

Step 1

Bake potatoes 1 hour or until tender. Cool slightly and peel. Smash potatoes and add remaining ingredients. Cook in a greased 2 qt. casserole dish.
May top with additional cheese if desired.
