Bruschetta Cups

Ingredients

  • 1 pint grape tomatoes, chopped and drained of extra juice
  • 1/8 c. basil leaves, chopped
  • 1/2 T. balsamic vinegar
  • 4 oz. mozzarella cheese (plus extra for topping)
  • 2 T. parmesan cheese
  • 1 clove garlic, minced
  • 1 t. olive oil
  • 1/8 t. salt
  • 1/8 t. pepper
  • 30 mini phyllo cups

Preparation

Step 1

Combine all ingredients except shells, allow mixture to sit for at least 30 minutes, or best overnight. Spoon about 1 T. of the mixture into each phyllo cup, top with additional mozzarella cheese. Preheat oven on broiler setting, broil for 3-5 minutes or until cheese is melted (if refrigerating overnight let mixture come to room temperature first, or warm in microwave).
