boneless, skinless chicken breats
cup grated parmesan
tsp. fresh thyme
Place 24 inch aluminum foil on counter. In center drizzle one tablespoons oil over area for chicken. Make a bed of two slices of tomato. Top with chicken. Season with 1/2 tsp. each salt and pepper Sprinkle with parmesan and thyme leaves. Fold sides of foil over chicken, leaving room around chicken. Seal. Preheat a large skillet; add oil. Place packets in skillet. After two minutes, the packet will expand Cook another six minutes. Remove from skillet and rest for one minute.
