Sour Dough Bread Variations

Ingredients

  • Sourdough Raisin Bread:
  • 1 cup raisins
  • boiling water
  • 1/2 ½ cup sugar
  • 1/2 ½ cup corn oil
  • 1 Tablespoon salt
  • 1 cup starter
  • 6 cups bread flour or plain flour

Step 1

Sourdough Raisin Bread
Cover raisins with boiling water until plump. Drain and save raisin liquid, adding water to make 1 ½ cups warm liquid. Stir sugar, oil, salt, and starter into liquid. When dissolved, stir in raisins and enough flour to make soft dough. Knead on floured board until smooth. Place in oiled bowl, turning over to coat with oil. Cover with clean cloth. Let rise in warm place for approx. 8 hours, until doubled. Punch down, shape into 3 loaves. Let rise another 8 hours, until doubled. Bake at 325 for about 35-45 minutes on lowest shelf of oven. Remove from pans and cool on rack.

Cinnamon Swirl Bread- 3 loaves:
Make regular sourdough. After first rising, punch down and divide into 3 equal portions. For each loaf, pat or roll one portion into a 9X12” rectangle. Spread with soft margarine, sprinkle with cinnamon and sugar mixture, and roll up tightly from short end. Pinch to seal the dough along the seam and ends. Place in loaf pans, cover and let rise about 8 hours or until doubled. Bake at 325 for about 40 minutes on bottom shelf of oven. Remove from pans and cool on rack.

Cinnamon Rolls- 4 doz.:
After first rising of regular sourdough, punch down and divide into 4 portions. Roll each into a long rectangle, about 14X8”. Spread with soft margarine, sprinkle with cinnamon and sugar mixture. Roll-up tightly from long side, pinching seam to seal. Cut into 1”slices. Place in buttered pan, cover with plastic wrap sprayed with baking spray, and let rise approx. 8 hours in warm place. Bake at 325 for about 35 minutes on lowest shelf of oven. Drizzle with glaze.

Pizza Swirl Bread- 3 loaves:
Make sourdough, reducing sugar to ¼ cup. After first rising, shape like cinnamon swirl bread, but spread with pizza sauce, dot with pepperoni slices, and sprinkle with mozzarella cheese. Roll up tightly and pinch to seal. Let rise about 8 hours and bake at 325 for 35-45 minutes on lowest shelf of oven.

Garlic Herb Bread- 3 loaves:
Make sourdough, reducing sugar to ¼ cup. Shape like cinnamon swirl, spreading with soft margarine, garlic powder, and Italian seasoning herb mixture. Roll up tightly and pinch to seal. Let rise about 8 hours and bake at 325 for 35-45 minutes.
