GAZEBO CHEESE SOUP

Ingredients

  • 1/2 stick butter
  • 3 chopped green onions
  • 3 stalks of celery, chopped with some leaves
  • 2 grated carrots
  • 2 (10 3/4 oz) can chicken broth
  • 3 (10 3/4 oz) cans Heinz potato soup
  • 8 oz grated yellow cheese
  • parsley flakes
  • few drops of Tabasco
  • salt (to taste)
  • coarse ground pepper
  • 8 oz sour cream
  • 3 T Sherry

Preparation

Step 1

Melt butter over low heat and saute onions, celery and carrots. Add chicken broth, cover and simmer 30 minutes. Add potato soup, cheese, parsley, Tabasco, salt and pepper. Stir in sour cream, simmer for 15 minutes, add Sherry and stir.
