Ingredients

    envelope mesquite or zesty herb marinade mix

  • 1/3

    C. water

  • 3

    T. cider vinegar

  • 3

    T. oil

  • 2

    boneless skinless chicken breasts (4 oz each)

  • 1/2

    ½ C. Alfredo sauce

  • 3

    T. grated parmesan cheese

  • 3

    tsp. Italian seasoning

  • 1

    tsp. garlic powder

  • 1

    C. mozzarella cheese (or ½ C. mozzarella and ½ C. cheddar)

  • 1/2

    ½ medium green pepper, chopped

  • 1/2

    ½ small red onion, thinly sliced

  • 1/2

    ½ C. fresh mushrooms

  • 1

    pre-baked Italian bread shell crust (14 oz)

Directions

Combine 2 T. marinade mix, water, vinegar and oil. Pour 1/3 cup marinade in large sealable plastic bag; add chicken. Let sit in frig for at least 1 hour. Cover and frig remaining marinade. Gill chicken, covered, over medium heat or broil 4 inches from heat for 5-7 minutes on each side or until juices run clear. Baste with reserved marinade. Cool and then cube chicken and set aside. Place bread shell crust on ungreased pizza pan. (I preheated my stone and put it on there.) Spread Alfredo sauce on, top with parmesan cheese and remaining ingredients. Bake uncovered at 450 degrees for 8-10 minutes or until cheese is melted.
