Honey Orange Chicken

Ingredients

  • 2 tbsp fresh orange peel
  • 1/2 cup honey
  • 1 tsp fresh lemon peel
  • 2 tbsp soy sauce
  • 2 cloves garlic
  • 1 tsp dry mustard
  • 1 cup fresh orange juice
  • 1/2 cup unsalted butter, melted
  • 1/3 cup fresh lemon juice
  • 2 broiler/fryer chickens (3 to 31/2 Ibs each), cut up

Preparation

Step 1

1) Mix the orange and lemon peels with the garlic.

2) Combine to mix above, the orange juice, lemon juice, honey, soy sauce, dry mustard and butter Blend together.

3) Pour the above over chickens (quartered). Marinate at room temperature for 2 hours. Remove from marinade, reserving marinade for basting. Place the pieces of chicken on the high rack or on the Flavorwave optional browning tray for crispier chicken. Cook at 400°F for about 20 minutes, basting and turning once, to an internal temperature of 180°F.

4) Reduce remainder of sauce while cooking over medium heat, stirring often. Spoon sauce over chicken and serve over
cooked brown rice.
