Tomato and Lemon Spaghetti with Seafood

You can use any seafood. Good with crab, scallops, shrimp, lobster. Add parm either at the end or on top of individual servings. I also top individual plates with a wee bit of olive oil.

Ingredients

  • 2 tbsp olive oil
  • 2 tbsp finely chopped red onion
  • 2 garlic cloves minced
  • 2 C seafood or more the better
  • 3 toms cubed (seeded optional)
  • 2/3 C plain yogurt
  • 1/2 lemon....1-1.5 tbsp
  • freshly ground pepper and salt to taste
  • 1 handful parsely

Preparation

Step 1

Seafood
Cook seafood until done. Place on plate and cover with foil.
Pasta
Begin cooking pasta
Sauce
Heat olive oil and add onion and garlic. Sweat for about 4 minutes until soft but no colour
Add toms and gently simmer for about 5 minutes. If using crab, simply add crab at this point. Stir in the yogurt and lemon. Remove from heat. Adjust taste.

In a large bowl, add pasta, seafood, sauce and parm if adding. Gentle mix and serve.
