baked 9 inch pie crust
cups grated mozzarella cheese ( divided )
cup parmesan cheese
medium sized tomatoes, diced and drained
cup fresh basil leaves
tsp garlic powder
tsp black pepper
Preheat oven to 375, bake pie crust 10 minutes after pricking with fork. Remove the crust from the oven and cover the bottom with 1/2 cup mozzarella. chop tomatoes removing the soft seeded area. and drain on paper towels. In a bowl, mix together mozzarella cheese, mayonnaise and all four dried ingredients until well blended. layer tomatoes on top of the cheese in bottom of pie crust, layer julienne fresh basil on top of the tomatoes. Spread cheese and mayonnaise mixture on top of tomatoes and basil. Cover with parmesan cheese. Back in the oven for 35-40 minutes or until golden brown and bubbly. Enjoy!
