Chicken Satay

Ingredients

  • 1/4 cup smooth peanut butter
  • 2 tablespoons mince onion
  • 2 tablespoons lemon juice
  • 2 tablespoons soy sauce
  • 2 teaspoon of garlic, minced
  • 1 teaspoon of coriander
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons minced fresh parsley
  • 1 pound boneless, skinless chicken breast, cut into 1 inch pieces

Preparation

Step 1

1. In a medium bowl, combine all the marinade ingredients thoroughly.
2. Add chicken pieces, and toss to coat well. Cover the bowl, and chill the chicken 4-8 hours
3. Remove the chicken from marinade. In grill pan, on sear (575 degrees) Cook chicken for 10 minutes turning and moving as not to scorch the chicken. Serve warm.
