Ingredients

  • Ricotta Mixture
  • 6 lbs. ricotta
  • 1 teaspoon lemon juice
  • 4 tablespoons sugar
  • 4 eggs
  • Dough Mixture
  • 12 eggs
  • 2 cups warm water
  • 1 teaspoon salt
  • 1 teaspoon oil
  • 8 to 10 cups of flour

Preparation

Step 1

In bowl eggs add rest of ricotta ingredients and mix well. Set aside.

In large mixing bowl put eggs, water, salt then oil. Mix well. Then gradually add flour. Then add as needed to form soft dough. Knead dough until all lumps are out and the dough is smooth.

Cover with flour put dough in plastic bag or cover with plastic wrap. Refrigerate for 1/2 hour.
