Ingredients

  • 1 pie crust - bake about 10 minutes at 350
  • 4-6 tomatoes sliced and drained on paper towels for 30-60 minutes.
  • basil
  • Light Mayo, not fat free
  • bacon - I use bagged Hormel, or you can use real cooked and drained bacon also.
  • Fresh Parmesan cheese about 4-8 oz.
  • Mozzarella cheese shredded about 4-8 oz.

Preparation

Step 1

Place 4-5 slices of tomato in pie shell. Sprinkle with basil. Place a small amount of mayo on each tomato, about 1/2 teaspoon. Then, sprinkle with bacon. Then, sprinkle with both cheeses. Repeat this 3 to times. Bake at 350 for about 20 minutes, or until crust is done. Let cool slightly and cut into 8 pieces.
