Italian Baked Chicken and Orzo

Ingredients
- 8 Points Plus per serving
- 1 c. dry orzo
- 1/2 c. cubed chicken brease (1 breast)
- 1/2 c. diced onion
- 1 clove garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1 c. shredded mozzarella
- 1/4 tsp salt
- 1/4 tsp. ground black pepper
- 1/4 c. bread crumbs
- 1/4 c. grated parmesan
- 1 tbsp. butter

Preparation
Step 1
Preheat oven to 400 degrees
Cook pasta according to package
Put olive oil in a med. saute pan over med. heat. Add chicken and cook for 3 mins. Add onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked throu. About 5 mins. more. Put the chicken mixture into a bowl with the cooked pasta. Add the tomatoes, mozzarella cheese, salt and pepper. Stir to combine. Place the mixture in a buttered 8x8x2 baking dish. In a small bowl mix together the bread crumbs and the Parmesan cheese. Sprinkle over the top of the past mixture. dot the top with small bits of butter. Bake until the top is golden brown, about 30 mins.
