Ingredients

  • 1 beef flank or round tip steak (1 1/2 to 1 1/3lbs)
  • 1/2 cup lime juice
  • 6 garlic cloves, chopped
  • 1 tsp black pepper
  • salt
  • 1 large green bell pepper cut lengthwise into 1 in strips
  • 8 corn tortillas, warmed
  • tomato salsa

Preparation

Step 1

1. Combine steak, lime juice, garlic, and black pepper in resealable plastic food storage bag; seal. Refrigerate overnight, turning at least once to marinate meat evenly.

2. Preheat broiler. Remove steak from bag and place in broiler pan. Sprinkle with salt to taste. Add bell peppers to same bag; seal. Turn to mix; set aside. Broil steak 6 to 9 minutes per side for medium rare to medium turning once. Add bell pepper strips to broiler pan while turning steak.

3. Transfer steak to cutting board; slice across the grain into thin strips. Place steak on warm tortillas. Top with pepper strips and salsa. Serve immediately.

Serving suggestion: Serve with a tossed green salad and refried beans.
