Ingredients
- 1/4 cup caribbean jerk marinade
- 1 1/2 pounds beef stew meat
- 4 medium red potatoes, about 3/4 pound, cut into fourths
- 1/3 cup flour
- 1 tbsp spicy cajun seasoning
- 1 can (14 ounces) diced tomatoes, undrained
- 3 cups frozen stir fry, peppers & onions
Preparation
Step 1
Pour marinade over beef in plastic bag, coat beef & let stand 15 minutes
spray inside of 4-5qt slow cooker, place potatoes in cooker, mix flour & cajun seasoning, toss w/beef and marinade, coat well, place beef & marinade on potatoes, add tomatoes
cook on low 7-8hrs or until tender
stir in veggies, cook on low another 15 minutes until veggies are tender.
