Ingredients
- 2 T oil
- 1 1/2 lbs boneless, skinless chicken breasts, cut in 1 inch cubes
- 1 small onion, coarsely chopped
- 1 medium green bell pepper, coarsely chopped
- 1/2 cup chicken broth
- 1 can (14 1/2 oz) red kidney beans, undrained
- 1 can (14 1/2 oz) diced tomatoes
- 1 T ground chili powder
- 1 1/2 t garlic salt
- 1 t ground cumin
- 1 t oregano or cilantro leaves
- 1 t sugar (optional)

Preparation
Step 1
Heat oil in a dutch oven or large saucepan over medium-high heat. Add chicken, onion and bell pepper; saute 8-10 minutes.
Stir in remaining ingredients. Bring to a boil. Simmer 15 minutes. Serving suggestion: serve in a hollowed-out hearth baked bread bowl.
