Ingredients
- 3/4 cup all-purpose flour
- 3/4 cup white whole wheat flour
- 1 1/2 tablespoons splenda granulated sweetener
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 large eggs
- 2 larges egg whites
- 1 1/2 cups lowfat buttermilk
- 1 teaspoon vanilla extract
Preparation
Step 1
1. In a medium bowl, combine the flours, sweetener, baking powder, and baking soda.
2. In a separate bowl, whisk together the eggs, buttermilk, and vanilla extract. Pour the liquid ingredients into the dry ingredients and stir until well combined. Make sure not to over-mix the batter.
3. Spray a nonstick skillet or griddle with cooking spray and place over medium heat. Pour 1/4 cup of batter per pancake onto skillet and spread into a 4-inch circle. Cook the pancakes for 3 to 4 minutes on the first side, or until golden on the bottom. Flip the pancake just once more and cook for an additional 2 to 3 minutes. Serve hot.
