Ingredients
- 1 T. oil
- 1 C. chopped onion
- 2 garlic cloves minced
- 1 lb. chicken breasts, bite sized pieces
- 2 (14.5 oz) cans ready to serve chicken broth
- 1 tsp. oregano
- 2 (4.5 oz) cans chopped green chilies, drained
- 4 (15.5 oz) cans great norther beans
- 1/2 tsp. cumin
- Dash ground red pepper-cayenne
- 2 C. shredded Monterey jack cheese
- 2 (8 oz) packages cream cheese
- chopped fresh cilantro
Preparation
Step 1
Heat oil until hot. Add onions, garlic and chicken, cook and stir until chicken is no longer pink.
Stir in all remaining ingredients except Mont. Jack cheese. Bring to a boil. Reduce heat to low; simmer 30 minutes to blend flavors; stirring occasionally.
Add Monterey Jack cheese. Simmer for another 5 minutes.
